FOR 4 PORTIONS
INGREDIENTS POPCORN COUSCOUS SALAD WITH MANGO
- 1 teaspoon oil
- 25g Popcorn loop popcorn corn
- 150 g instant couscous
- 2 tbsp raisins
- 150 grams of leek
- 250 grams of mangoes
- 1 red pepper
For the dressing
- 3 tbsp oil
- 1 ½ tbsp lime juice
- salt, pepper, curry
First put 2 tablespoons of oil in an uncoated saucepan. Then the popcorn as usual with the popcorn loop Prepare (see instructions on the packaging).
Place the couscous in a heat-resistant bowl and pour boiling water over it, allow to swell and fluff with a fork after it has cooled. Pour hot water over the raisins and let them soak for 10 minutes. Clean the leek, cut into rings and place in a bowl with the couscous. now dice and add the mango. Core the peppers, remove the partitions, then wash and cut into fine strips. Drain the raisins and add to the salad bowl.
For the dressing, mix together the oil and lime juice and season. Then pour over the salad and mix with the popcorn: an exotic popcorn couscous salad is ready!
